Healthier Grilling with Mangalista by Mosefund

Grilling season is upon us. I received this great pack of Mangalista in the mail just in time for the Mother's Day weekend. And boy was I happy since I had no intention braving the masses to eat out. Check out the Pork Burgers and Beer Brats we indulged on and learn why this breed of pig is so coveted and coined the Kobe Beef of Pork.

Beer Brats, Pork Burgers amazing quality and ready for the grill!  The uncured Culatello makes for a perfect foundation to a meat and cheese plate.

The Mangalista Pig is a Hungarian breed of domestic pig developed in the mid-19th century. The Mangalica pig grows a thick, wooly coat similar to that of a sheep and was almost extinct untill a series of farmers brought the breed back to life in the 1990's. In 2007, the first Swallow-bellied Mangalicas were imported to the United States by Heath Putnam. Putnam raised several thousand pigs on a variety of farms before selling his operation to Mosefund Farms in 2012

Mosefund farm in New Jersey is the exclusive producer, east of the Mississippi, of this rare breed and raises only 100 % pure Mangalitsa genetics CERTIFIED animals. More time is invested in raising this breed of pig. More than one year, as opposed to five months the 'normal" pig is raised, allowing for more marbling creating the bounty of flavor the cuts have. They are also fed a mix of barley, wheat, wheat bran, alfalfa, and sunflower seeds, unlike the pigs feed on factory farms with little corn and nothing with soy. Whats the result in this feeding and raising tradition? The Mangalitsa creates mostly monounsaturated and polyunsaturated fats and is high in omega fatty acids which are essential to our bodies.

1/2 Lb. patties and 1/4 lb. brat links grilled up to perfection with our favorite veggies.

The burgers were huge, a whopping 1/2 pound per patty! I ended up butterflying them since we had the brats to enjoy. Due to the high content of marbling in these products you need to keep an eye on them while cooking on an open flame. As the fat melts away during grilling it can cause flare ups on your grill. So what's it taste like? Extremely tender, juicy and full of flavor. The brats were beyond amazing. They had great balance of seasoning that didn't overwhelming the pork, they were my favorite hands down. I was beyond happy with the quality and taste and now I'm thinking regular beef burgers are not gonna cut it for me anymore.
