Bold Bites at Tempo Urban Kitchen in Brea

I was invite to a private tasting in Brea at Tempo Urban Kitchen expecting to be wowed by one chef. What all the invited guests were treated to were 3 outstanding local OC chefs who each prepared a special dish for our dining adventure. Check out what we experienced and read a little about these seasoned chefs making their mark on this side of the border and beyond.

Margarita anyone? This little number is a Mango- Serrano Infused Margarita with a Tajino rim. Sweet and spicy and oh so smooth going down.

Marinated Grill Octopus was our first tasting created by Chef Chris Tzorin. With more than 12 years of professional culinary experience, he is currently the Executive Chef at Savannah Chop House. This plate was made with guajillo chili oil, Serrano sauce, lime cream and chipotle mayo finished off with microgreens.

Our second course was created by Chef Jorge Cueva Estrella founder and creator of Tempo Urban Kitchen. Perfectly cooked Pork Belly was the focus on this reconstructed Korean inspired Taco. Made with Braised pork belly, tortilla puree, fresh coriander and topped with cilantro for measure. The garnish of thinly sliced mango rolls gave a nice balance to the pallet.

These Sous Vide Short Ribs were created by Chef Salvador Carrillo, Executive Chef at Tempo Urban Kitchen. A graduate of the Universidad Tecnológica de Bahía de Banderas in Nuevo Vallarta, Mexico this award winning chef has now made his home at Tempo Urban Kitchen. What he brings with him are a seasonal modern-globally infused flavors. 

The short ribs were slow cooked for 28 hours and covered in a meat juice sauce, beet marmalade and topped with a vegan caviar. The plate was then garnished by pickled carrots wrapped in New York Home made Serrano ham.
