One Pot Carrot Ginger Soup
Carrot Ginger Soup in a snap! It tastes like you spent hours preparing but this simple soup literally takes about 30 minutes from cooktop to the table. This recipe was given to me by a good friend, what I love about it besides how filling and delicious it is, you can make it in one pot keeping clean up easy. It can also be made ahead of time if you are planning a dinner party or just need a quick lunch or dinner side.
List of the Ingredients you will need:
2T Butter and Olive oil
1 Yellow Onion chopped
1in". Ginger peeled and chopped
2-3lbs Carrots peeled and chopped
5-6c Chicken stock or if you prefer you can use vegetarian stock
1c Heavy whipping cream
1T. Salt
1t. Pepper
1T Powder Curry (Optional)
Directions:
Heat butter and olive oil over medium heat in a deep pan, add onions, salt, and pepper cooking until onions are translucent.
Add carrots, ginger and stock. Bring to a boil then lower to a medium heat. Cook for approximately 20 minutes or until the carrots are fork tender.
Remove from heat and puree with a immersion blender until smooth.
Add cream and mix. Do not bring back to boil that will curdle the cream. To re-warm do it over a low heat.
Pretty simple right? In the event you have leftovers you can freeze it to use at a later date. To reheat: Warm over a low heat. You’ll wanna serve this up with a fresh baguette or your favorite bread to wipe the bowl clean….. enjoy!
